Red White and Blue Trifle with Creamy Layers

Seriously, no joke, this red white and blue trifle is the best. My mom made it, and before her, my grandma made it whenever the summer table needed something fun. It’s classic, simple and so good. Juicy strawberries and blueberries get layered with toasted pound cake, vanilla pudding and fluffy whipped cream.

Ingredients

Ingredients for Red White and Blue Trifle with Creamy Layers.

Here’s what I use for this recipe and you can always make substitutions if you prefer.

  • fresh strawberries: Sliced for the red fruit layer and juicy sweetness.
  • fresh blueberries: Kept whole for the blue layer and bright berry pop.
  • granulated cane sugar: Draws out berry juices without making the fruit soupy.
  • fresh lemon juice: Keeps the berries lively and balances the cream.
  • vanilla pound cake: Cubed and lightly toasted so the layers hold shape.
  • instant vanilla pudding mix: Thickens the creamy white layer fast.
  • whole milk: Whisks into the pudding for a smooth base.
  • cold heavy whipping cream: Whips into soft peaks for a light creamy layer.
  • powdered cane sugar: Sweetens the whipped cream without grit.
  • pure vanilla extract: Rounds out the pudding and whipped cream flavor.
  • cream cheese: Adds body so the cream layer scoops cleanly.

Tools You’ll Need

  • Serrated knife: Cuts the vanilla pound cake into clean cubes.
  • Mixing bowls: Hold berries, pudding and whipped cream filling.
  • Whisk: Thickens the pudding and smooths the cream.
  • Rubber spatula: Folds the cream without knocking out too much air.
  • Sheet pan: Toasts the pound cake cubes evenly.
  • Clear glass trifle bowl: Shows off the red, white and blue layers.

Instructions

Step 1: Slice the strawberries and macerate the berries

Sliced strawberries and blueberries macerating for berry trifle.

Keep the fresh strawberries and fresh blueberries at 40°F. Slice the strawberries into uneven 1/4-inch pieces and toss them with 2 tablespoons granulated cane sugar and fresh lemon juice for 12 minutes. Fold with a rubber spatula from the bottom of the bowl so the berries shine but don’t crush. You’ll see glossy red juice gather at the edges. Go past 20 minutes and the berries get too soft and bleed into the cream.

Tip: Save a few whole strawberries for the top so the finished trifle has more height.

Step 2: Toast the pound cake cubes

Toasted vanilla pound cake cubes for red white and blue trifle.

Heat the vanilla pound cake cubes at 350°F for 8 to 10 minutes. Spread the cubes in a loose single layer and turn a few pieces over at minute 6 with your fingers once they’re cool enough to touch. The edges should look lightly golden while the centers stay pale and soft. Skip this short toast and the cake turns soggy before the trifle chills. (I tried untoasted cake first and the bottom layer went mushy by dessert time.)

Tip: Cut the cubes a little unevenly so some pieces soak up cream while others stay cakey.

Step 3: Whisk the vanilla pudding until thick

Thick vanilla pudding mixture for creamy trifle layers.

Use cold whole milk at 38°F and whisk it with instant vanilla pudding mix for 2 minutes. Move the whisk in tight circles around the center and then scrape the sides so no powdery streaks hide along the bowl. Let it stand for 5 minutes at 40°F. It should mound softly when lifted and look smooth with a pale yellow shine. Stop too early and the cream layer slides between the fruit instead of sitting in clean ribbons.

Tip: Use whole milk here because low-fat milk sets looser and can make the layers slump.

Step 4: Fold the whipped cream into the cream cheese mixture

Beat softened cream cheese at 68°F with powdered cane sugar and pure vanilla extract for 90 seconds. Add cold heavy whipping cream and whip for 2 to 3 minutes until soft peaks lean over instead of standing stiff. Fold half the thick vanilla pudding into the whipped cream with slow J-shaped turns. The mixture should look fluffy with faint pale yellow ribbons. Overwhip it and the cream turns grainy and heavy.

Tip: Chill the bowl for 10 minutes first if your kitchen runs warm.

Step 5: Layer the cake, berries and cream

Keep the creamy filling at 40°F while you build the trifle. Add one third of the toasted vanilla pound cake cubes, then spoon on strawberry juice, sliced fresh strawberries, whole fresh blueberries and a thick cream layer over 6 to 8 minutes. Repeat the layers with uneven spoonfuls so the glass shows red, white and blue bands. Press lightly with the back of a spoon only where the cake sticks up. Pack it too tightly and the cream squeezes out the sides.

Tip: Let some fruit touch the glass because those bright patches make the slices look prettier.

Step 6: Chill and finish the trifle

Finished Red White and Blue Trifle with Creamy Layers chilled and ready to serve.

Cover and chill the trifle at 40°F for 2 to 4 hours. This gives the cake time to soften while the cream stays thick enough to scoop. Top with the remaining sliced fresh strawberries and whole fresh blueberries right before serving. You’ll see soft cake edges, creamy waves and berry juice streaks through the glass. Chill past 12 hours and the bottom turns too wet.

Tip: For clean scoops, dip the serving spoon straight down instead of dragging through the layers.

Pro Tips

  • Don’t skip the cake toast because it keeps the bottom from turning mushy.
  • Chill the cream before layering so the white bands stay thick.
  • Use a clear bowl if you have one because the colors are half the fun.
  • Add the top berries right before serving so they look fresh and juicy.

Storage Instructions

Cover leftover trifle and keep it in the fridge at 40°F for up to 2 days. The flavor stays good, but the cake softens more each day. Don’t freeze it. The cream can separate when thawed and the berries turn watery.

Frequently Asked Questions

Can I make this trifle the night before?

Yes, but add the final berry topping the day you serve it. The inside layers hold well for about 12 hours.

Can I use frozen berries?

I don’t love frozen berries here because they release too much liquid. If you use them, thaw and drain them really well first.

Can I make this in individual cups?

Yes. Use the same layers in small cups and chill them for 1 to 2 hours before serving.

What can I use instead of a trifle bowl?

Use a deep glass serving bowl or clear jars. The recipe still works as long as the layers have room to stack.

This is the kind of recipe I wish I had found years ago. It would have saved me so many last-minute holiday dessert scrambles.

But now that I have it, I make it all the time and I think you will too. If you enjoyed this, check out Patriotic Oreo Icebox Cake (no-bake Summer Favorite) and Strawberry Cream Cheese Muffins on the blog.
