Description

This Red White and Blue Trifle with Creamy Layers is an easy holiday dessert with quick berry prep and simple creamy layers.   • 2 cups fresh blueberries
  • 3 tablespoons granulated cane sugar
  • 1 tablespoon fresh lemon juice
  • 1 loaf, about 12 ounces vanilla pound cake
  • 1 package, 3.4 ounces instant vanilla pudding mix
  • 2 cups whole milk
  • 1 1/2 cups cold heavy whipping cream
  • 1/4 cup powdered cane sugar
  • 1 teaspoon pure vanilla extract
  • 4 ounces, softened cream cheese


Instructions

  1. Keep the fresh strawberries and fresh blueberries at 40°F. Slice the strawberries into uneven 1/4-inch pieces and toss them with 2 tablespoons granulated cane sugar and fresh lemon juice for 12 minutes. Fold with a rubber spatula from the bottom of the bowl so the berries shine but don’t crush. You’ll see glossy red juice gather at the edges. Go past 20 minutes and the berries get too soft and bleed into the cream.
  2. Heat the vanilla pound cake cubes at 350°F for 8 to 10 minutes. Spread the cubes in a loose single layer and turn a few pieces over at minute 6 with your fingers once they’re cool enough to touch. The edges should look lightly golden while the centers stay pale and soft. Skip this short toast and the cake turns soggy before the trifle chills. (I tried untoasted cake first and the bottom layer went mushy by dessert time.)
  3. Use cold whole milk at 38°F and whisk it with instant vanilla pudding mix for 2 minutes. Move the whisk in tight circles around the center and then scrape the sides so no powdery streaks hide along the bowl. Let it stand for 5 minutes at 40°F. It should mound softly when lifted and look smooth with a pale yellow shine. Stop too early and the cream layer slides between the fruit instead of sitting in clean ribbons.
  4. Beat softened cream cheese at 68°F with powdered cane sugar and pure vanilla extract for 90 seconds. Add cold heavy whipping cream and whip for 2 to 3 minutes until soft peaks lean over instead of standing stiff. Fold half the thick vanilla pudding into the whipped cream with slow J-shaped turns. The mixture should look fluffy with faint pale yellow ribbons. Overwhip it and the cream turns grainy and heavy.
  5. Keep the creamy filling at 40°F while you build the trifle. Add one third of the toasted vanilla pound cake cubes, then spoon on strawberry juice, sliced fresh strawberries, whole fresh blueberries and a thick cream layer over 6 to 8 minutes. Repeat the layers with uneven spoonfuls so the glass shows red, white and blue bands. Press lightly with the back of a spoon only where the cake sticks up. Pack it too tightly and the cream squeezes out the sides.
  6. Cover and chill the trifle at 40°F for 2 to 4 hours. This gives the cake time to soften while the cream stays thick enough to scoop. Top with the remaining sliced fresh strawberries and whole fresh blueberries right before serving. You’ll see soft cake edges, creamy waves and berry juice streaks through the glass. Chill past 12 hours and the bottom turns too wet.
