Description

Instructions

  1. Preheat the oven to 350°F. Set the full-fat block cream cheese and egg yolk at 70°F for 20 minutes. Beat the cream cheese with granulated cane sugar for 90 seconds. Then add the yolk and 1/2 teaspoon pure vanilla extract. Mix another 30 seconds and scrape the sides once. Keep the motion steady so you don’t whip in excess air. The filling should look smooth, thick and softly glossy. You shouldn’t see sugar grains or yellow yolk streaks. Stop after 2 minutes total because longer beating loosens the mixture and makes it spread into the batter. Chill it for 10 minutes if your kitchen is above 75°F. Gentle mixing keeps the filling dense enough to stay centered.
  2. Heat the oven to 350°F. Whisk unbleached all-purpose flour, baking soda, cinnamon, ginger, nutmeg, cloves and fine sea salt for 30 seconds. In a second bowl, whisk pumpkin puree, light brown sugar and two large eggs for 30 seconds. Add refined avocado oil and 1 teaspoon pure vanilla extract. Whisk for 30 seconds more. The wet mixture should look glossy and evenly orange. Pour the dry mixture over the wet mixture. Fold with a rubber spatula in broad J-shaped strokes for 20 to 25 turns. Stop when only two tiny flour streaks remain and the batter falls in thick ribbons. Overmixing past 30 turns makes the crumb tight and tunnelled. Brief folding limits gluten so the muffins stay tender.
  3. Set 12 white paper liners in a standard muffin tin while the oven holds at 350°F. Spoon 2 tablespoons batter into each cup. Add 2 teaspoons chilled filling to the center, then cover with 2 tablespoons batter. Finish with 3 teaspoons filling and swirl twice using a small wooden toothpick. Scatter 1/2 teaspoon roasted unsalted pepitas over each top, keeping the placement uneven. The cups should look three-quarters full with white ribbons peeking through orange batter. Peel the liner from one muffin and split it through the middle with a gentle sawing motion. Place both uneven halves on a small white plate. The crumb should look moist and softly spring back when pressed near the edge. The cream cheese center should hold a clean white pocket without running. Cut sooner than 20 minutes and the filling smears into the hot crumb. Waiting lets the proteins set so each slice shows clear layers.

Pro Tips:

  • Use block cream cheese at 65°F to 70°F. Tub-style spread contains more water and can sink into the batter.
  • Measure 1 3/4 cups flour by spooning and leveling, or use 220 grams. Direct scooping can add enough flour to dry the crumb.
  • Keep pumpkin puree at 1 cup. Even 2 extra tablespoons can make the centers gummy and lower the domes.
  • For taller Pumpkin Cream Cheese Muffins, fill each liner about three-quarters full. Bake the tin on the center rack at 350°F.
  • Chill the filling for 10 minutes when the room exceeds 75°F. This keeps the white center distinct instead of feathered.
