Description

This easy Patriotic Oreo Icebox Cake is a quick no-bake dessert with simple Oreo layers, sweet cream, fresh berries and the best chilled slice for a holiday party or potluck. It’s a fun make-ahead treat with bright ideas for red white and blue toppings. It feels special but still tastes light enough for a healthy summer dessert table.

  • 3 cups heavy whipping cream
  • 8 ounces full-fat mascarpone cheese
  • 3/4 cup powdered cane sugar
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • 2 cups sliced fresh strawberries
  • 1 1/2 cups fresh blueberries
  • 1/4 cup red white and blue star sprinkles


Instructions

  1. Chill the heavy whipping cream and full-fat mascarpone cheese at 38°F for 20 minutes before mixing. Beat them with powdered cane sugar, pure vanilla extract and fine sea salt for 2 to 3 minutes, scraping the bowl once halfway through. Stop when the cream makes soft peaks that lean over at the tips. If you go past 3 minutes, the cream can turn grainy and the layers won’t spread smoothly.
  2. Keep the filling cold at 38°F and work for 4 to 5 minutes so it stays fluffy. Spread a thin layer of cream in the dish, then press 18 regular Oreo sandwich cookies into it with slight overlap and a few broken edges. Use your fingertips to nudge the cookies into the cream instead of smashing them flat. You’ll see cream peek through the gaps, and if you leave dry spaces, those cookies stay crunchy after chilling.
  3. Spoon half the mascarpone cream over the Oreo layer while it’s still about 38°F. Scatter 1 cup sliced fresh strawberries and 3/4 cup fresh blueberries across the top, then drag the cream gently through the fruit with a short swooping motion. The berries should look partly tucked in and partly visible. Miss this layer and the cake tastes flat because the cookies need fruit juice and cream to soften evenly. (I tried piling all the berries on top once, pretty, but the middle tasted plain.)
  4. Add the remaining 18 regular Oreo sandwich cookies and cover them with the last mascarpone cream. Keep the dish under 40°F and finish layering within 5 minutes, using the back of a spoon to make shallow waves instead of a flat top. The top should look thick with uneven white swoops and a few cookie bumps underneath. If the cream warms too much, it slides into the corners and the cake sets lopsided.
  5. Cover the cake and chill at 38°F for 6 to 8 hours. Don’t rush it because the cookies need time to drink in the cream and turn tender. You’ll know it’s ready when a small knife slides through without crunching. Cut before hour 6 and the cookie layers crack instead of slicing cleanly.
  6. Keep the cake at 38°F until the final 10 minutes before serving. Add the remaining sliced fresh strawberries, fresh blueberries and red white and blue star sprinkles with a loose scattering motion so the top doesn’t look too perfect. Slice with a steady downward cut and lift one piece onto a plate. You’ll see soft cookie stripes, creamy layers and berries pressed into the filling, but wait too long at room temperature and the cream starts slumping.

  • Slice strawberries evenly so the top is pretty but still homemade.
  • Don’t use warm cream because it won’t whip into strong peaks.
  • Chill overnight when you need cleaner party slices.
