Creamy cheesecake filling sits over buttery graham cracker crumbs with fresh strawberries and blueberries. Ingredients
- 1 cup honey graham cracker crumbs
- 4 tablespoons, melted unsalted butter
- 8 ounces, softened to 68°F full-fat cream cheese
- 1/2 cup powdered cane sugar
- 1 teaspoon pure vanilla extract
- 1 cup, cold at 40°F heavy whipping cream
- 1 cup, diced fresh strawberries
- 1 cup fresh blueberries
- 1/8 teaspoon fine sea salt
Instructions
- Keep the melted unsalted butter warm at 95°F and stir it into the honey graham cracker crumbs for 45 to 60 seconds. Press and turn the crumbs with a spoon until they look like damp sand. You’ll see darker buttery patches disappear as the crumbs clump lightly. Stop there because overworking makes the base dense instead of tender.
- Beat the full-fat cream cheese at 68°F with powdered cane sugar, pure vanilla extract and fine sea salt for 2 minutes. Scrape the bowl down once at the 1-minute mark so no thick cream cheese streaks hide at the bottom. Pour in cold heavy whipping cream at 40°F and whip for 90 seconds more. The filling should hold soft ridges and smell like vanilla cream. Stop before it turns stiff because it can feel heavy in the jars. (I tried whipping it longer once and the filling lost that soft spoonable texture.)
- Spoon 2 tablespoons of crumb mixture into each jar at room temperature, about 70°F, then press lightly for 10 seconds per jar. Use your fingertips or the back of a spoon and keep the pressure gentle. Add about 1/3 cup cheesecake filling over each base and nudge it toward the glass in small swoops. You’ll see wavy white layers against the crumb base. Press too hard and the crumbs compact into a tough bottom.
- Keep the jars chilled at 40°F while you add the fruit for 5 to 7 minutes. Scatter diced fresh strawberries over two sides and fresh blueberries over the other side, then gently tap each jar once to settle the berries. The berries should sit partly in the filling with a few pieces leaning into the glass. If you push them down too far, the colors smear and the layers look muddy.
- Cover the jars and chill at 38°F for 2 hours. The filling firms as the crumbs hydrate, so don’t serve before the full time. Top with the last few diced fresh strawberries and fresh blueberries right before serving. You’ll see clean spoonable layers and soft berry juices at the edges. Cut the chill short and the filling slumps when the spoon goes in.
