Description

This easy Gluten Free Chicken Noodle Soup is a quick and simple weeknight dinner with tender chicken, soft vegetables and silky gluten-free noodles in golden broth. It’s one of my best healthy comfort food ideas for meal prep or a cozy holiday lunch. The warm thyme and garlic smell fills the kitchen, while the noodles stay tender instead of mushy. The trick is cooking the noodles only until just tender, then letting the chicken finish gently in the broth.

Ingredients

Scale
  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion
  • 3 medium carrots
  • 3 large celery stalks
  • 3 large garlic cloves
  • 8 cups low-sodium gluten-free chicken broth
  • 1.5 pounds boneless skinless chicken breasts
  • 1 teaspoon dried thyme
  • 2 large bay leaves
  • 1.5 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 8 ounces gluten-free wide egg noodles
  • 2 tablespoons fresh flat-leaf parsley
  • 1 tablespoon fresh lemon juice

Instructions

  1. Set a 6-quart heavy-bottomed pot over medium heat, about 350°F at the cooking surface. Add the extra-virgin olive oil with diced yellow onion, sliced carrots and sliced celery. Cook for 6 to 8 minutes and stir from the bottom every 45 seconds. Add minced garlic during the final 30 seconds. The vegetables should soften without taking on dark color. Next, watch the onion turn translucent while the carrots become brighter orange and the celery loses its raw stiffness. You’ll smell the garlic clearly during the last 20 seconds. Pull the pot back if the garlic turns brown because burnt garlic makes the entire broth bitter. Keep this stage at moderate heat because gentle sweating builds sweetness without scorching the aromatics.
  2. Pour in the low-sodium gluten-free chicken broth and nestle both boneless skinless chicken breasts among the vegetables. Add dried thyme, bay leaves, kosher salt and black pepper. Bring the broth to 205°F and hold a gentle simmer for 14 to 16 minutes. Turn each breast once around minute 8 so the thicker portions cook evenly. Cook until the center reaches 165°F. Meanwhile, the chicken will change from pale pink to fully opaque ivory and the broth will become deeper golden. Small bubbles should rise steadily without a hard rolling boil. If the broth boils aggressively, the chicken fibers tighten and turn dry before the center finishes. Keep the broth near 205°F because gentle heat cooks lean chicken without squeezing out its moisture.
  3. Lift both chicken breasts from the broth after they reach 165°F and let them sit for 5 minutes. Pull them into irregular bite-size shreds. Meanwhile, keep the broth at a gentle 200°F simmer and add the gluten-free wide egg noodles. Stir through the center twice during 7 to 9 minutes so curled noodles separate without breaking. Stop when they bend easily but retain slight bite. The noodles should swell and turn tender while still holding distinct wavy edges. The broth will look slightly fuller because the noodles release a little starch. (I once let gluten-free noodles sit at a hard boil for 12 minutes, they went from perfect to soft fast.) Don’t overshoot the package window because fragile gluten-free starches continue softening after heat stops. Gentle simmering preserves the noodle structure before final assembly.
  4. Return all the shredded chicken to the pot and lower the broth to about 195°F. Fold the chicken through the noodles with slow sweeping motions for 2 minutes. Remove both bay leaves and stir in the lemon juice with half the fresh flat-leaf parsley. Taste once and adjust only with the measured remaining salt if needed. The chicken should warm through without another full boil. Finally, the Gluten Free Chicken Noodle Soup should look generously filled but still brothy. Irregular chicken shreds weave between soft carrot rounds and curled noodles while green parsley stays bright on the surface. A hard boil now can break the noodles and make the chicken stringy. Ladle immediately and scatter the remaining parsley unevenly over each bowl. Finish below boiling because residual heat keeps softening gluten-free noodles.

Notes

Pro Tips:

  • Keep the broth near 200°F to 205°F instead of a rolling boil. Gentle bubbling keeps the chicken tender and prevents gluten-free noodles from breaking apart.
  • Cut the carrots into roughly 1/4-inch rounds so they soften in about 20 minutes. Thicker slices can stay firm after the noodles are already tender.
  • Start checking gluten-free noodles 2 minutes before the package suggests. They should bend easily but still show defined edges when you lift one from the broth.
  • Use an instant-read thermometer and remove the chicken at 165°F. Cooking it even 10°F higher can make lean breast meat noticeably drier after shredding.
  • Add the 1 tablespoon fresh lemon juice only after lowering the soup below a boil. High heat dulls its brightness and makes the finish taste flatter.

Storage: Refrigerate Gluten Free Chicken Noodle Soup within 2 hours of cooking in a shallow airtight container. Keep it for up to 4 days at 40°F or colder. For the best texture, store extra noodles separately because they absorb broth overnight. You can freeze the chicken, broth and vegetables for up to 3 months. Leave about 1 inch of space in the freezer container so the liquid can expand safely. Reheat refrigerated soup over medium-low heat until the center reaches 165°F, usually 6 to 10 minutes depending on the amount. Add 1/4 cup fresh gluten-free chicken broth per 2 cups of soup if it has thickened. If frozen, thaw overnight in the refrigerator before reheating. Discard the soup if it smells sour, develops unusual foam or feels slimy. Don’t repeatedly cool and reheat the same batch because quality drops quickly.
