Description
This easy Crockpot Bourbon Chicken recipe is one of my favorite ideas for a quick and simple weeknight dinner or meal prep. The best part is the glossy brown sugar sauce that coats tender chicken with a rich sweet and savory flavor. This healthy option works for a holiday, potluck, brunch or party because the trick is slow cooking until the sauce clings beautifully. The smell of garlic and caramelized sugar fills the kitchen while the texture stays juicy and tender.
Ingredients
- 2 pounds boneless chicken thighs
- 1/3 cup bourbon
- 1/2 cup chicken broth
- 3/4 cup brown sugar
- 1/3 cup soy sauce
- 3 cloves garlic cloves
- 1 tablespoon fresh ginger root
- 2 tablespoons cornstarch
- 3 tablespoons water
- 2 tablespoons green onions
Instructions
- Combine 1/3 cup bourbon, 1/2 cup chicken broth, 3/4 cup brown sugar, 1/3 cup soy sauce, minced garlic and ginger in a large clear glass mixing bowl. Mix at room temperature for 2 to 3 minutes by whisking in slow circles until the sugar starts dissolving. You’ll see a dark amber liquid forming with small sugar grains disappearing and the garlic aroma becoming stronger. Keep the mixture moving evenly because missed mixing leaves salty pockets in the final sauce. Whisk for 3 minutes at room temperature, dissolving sugar evenly builds the glaze texture later.
- Place 2 pounds boneless chicken thighs into the sauce mixture and turn each piece using kitchen tongs for 1 to 2 minutes until fully coated. Keep the bowl at room temperature and gently fold the chicken through the glaze without tearing the meat. The chicken should appear glossy with sauce clinging to the surface and the pieces should overlap naturally. Don’t leave dry spots because uncovered chicken won’t absorb the flavor evenly during slow cooking. Coat the thighs thoroughly, the sauce layer protects moisture during the slow cook.
- Transfer the coated chicken thighs and sauce into a 6-quart slow cooker and cook on low heat at about 200°F for 4 to 5 hours. Stir once around the 3-hour mark by folding the pieces from the edges toward the center. The sauce will darken into a deep mahogany color and the chicken will become tender enough to pull apart easily. You’ll smell caramelized sugar and garlic as the glaze thickens. (I tested 3 hours first and the texture was firmer. The longer cook gave the best tenderness.) Slow cooking low and steady keeps the collagen breaking down without drying the chicken.
- Mix 2 tablespoons cornstarch with 3 tablespoons cold water then stir it into the chicken sauce during the final 15 minutes at low heat around 200°F. Fold gently with a spoon until the liquid starts coating the chicken pieces. The sauce changes from thin and shiny to a thicker glossy glaze that sticks to the chicken. You’ll notice a smooth texture and deeper color. Miss this final thickening window and the sauce stays watery instead of clinging. Add cornstarch slurry near the end, it creates the right sauce consistency without overcooking the chicken.
- Scoop the glazed chicken thighs onto a white serving plate and sprinkle 2 tablespoons sliced green onions over the top. Arrange the pieces loosely for 1 to 2 minutes while keeping the sauce visible around the edges. The finished chicken shows glossy mahogany coating, uneven caramelized edges and bright green garnish. You’ll see sauce pooling naturally around the pieces. Don’t cover the plate completely because the glaze should remain visible. Serve immediately after plating, the warm sauce stays glossy and the chicken remains juicy.
Notes
Pro Tips:
- Choose chicken thighs with some visible marbling because they stay juicy after 4 to 5 hours on low heat around 200°F. Lean pieces can turn stringy before the sauce finishes reducing.
- Measure the brown sugar carefully at 3/4 cup because extra sugar can make the glaze overly sticky. The sauce should coat a spoon with a smooth amber layer after cooking.
- Keep the slow cooker covered during the first 3 hours because heat loss can delay tenderness. Opening the lid often makes the chicken take longer to soften.
- Add the cornstarch slurry during the final 15 minutes instead of the beginning. Adding it too early can weaken the glossy texture of the bourbon sauce.
- Slice green onions right before serving and use about 2 tablespoons for the freshest flavor. The bright finish balances the rich caramelized glaze.
Storage: Store leftover Crockpot Bourbon Chicken in an airtight glass container for up to 4 days in the refrigerator. Freeze portions with the sauce included for up to 3 months in freezer-safe containers. Leave a small space at the top because the sauce expands slightly when frozen. Reheat the chicken at 325°F for about 20 minutes in a covered dish or warm smaller portions gently until heated through. Add 1 tablespoon of chicken broth if the glaze becomes too thick. Discard leftovers if you notice sour smells, unusual texture, or mold growth.
