Each round has a crisp golden panko crust, a tender green center and the warm smell of Parmesan and herbs. What makes this version different is the salt-and-dry step. The trick is removing surface moisture before the coating goes on, so every chip browns well instead of steaming.

- 1/2 teaspoon kosher salt
- 1 large large egg
- 1 tablespoon extra-virgin olive oil
- 1/2 cup Japanese-style panko breadcrumbs

- Keep the zucchini at room temperature, about 68 to 72°F. Slice both zucchini into 1/4-inch rounds and spread all 48 pieces in one layer. Sprinkle with 1/4 teaspoon kosher salt and rest for 10 minutes. Then blot both sides firmly with clean towels and press rather than rub. Keep the slices intact while removing every visible bead of moisture. The rounds should look matte and slightly flexible with dark green rims and pale centers. You shouldn’t see wet spots when you lift them. If you cut thicker than 1/4 inch or skip drying then the centers steam and the coating slides. Dry for 10 minutes because less surface water creates a crisp crust.
- Beat 1 large egg with 1 tablespoon extra-virgin olive oil for 45 seconds. In a separate shallow bowl mix 1/2 cup Japanese-style panko with 6 tablespoons Parmigiano-Reggiano. Add garlic powder, Italian seasoning, black pepper and the remaining 1/4 teaspoon salt. Dip each round once and press both faces into the crumbs. Finish each portion with 1/2 tablespoon grated Parmigiano-Reggiano, 3/4 teaspoon chopped flat-leaf parsley and exactly 2 basil leaves. Lift the crispiest rounds to the top. Don’t cover the bowl. The crust should feel dry and craggy while the centers stay tender. Colors will vary from honey gold to toasted brown and a few edges may curl. If you stack them while steaming hot then trapped moisture softens the bottom chips. Serve within 10 minutes for the strongest crunch. Rest briefly because escaping steam protects the crust from condensation.
